So starting today, I will be posting a new and healthy recipe on my blog every Thursday! Today, I am sharing with you guys, my new favorite recipe for colder weather! Hope you enjoy it 🙂
Quinoa enchilada casserole

Ingredients: (For 6 servings)

  • 1 cup of uncooked quinoa
  • 1 1/4 cup of enchilada or tomato sauce
  • 1/2 cup of corn
  • 1/2 cup of black beans
  • 3/4 cup of shredded cheddar
  • 3/4 cup of mozzarella cheese
  • 1 tomato
  • 1 avocado


  • In a saucepan, add 2 cups of water and 1 cup of quinoa, bring it to a boil. Then, reduce the heat, cover and simmer until the liquid is fully absorbed. It should take between 15 and 20 minutes. Set aside.
  • Preheat oven to 375°F (or 190°C)
  • In a large bowl, combine your cooked quinoa, sauce, corn, beans. Season with salt and pepper. Add 1/2 cup of cheddar and 1/2 cup of mozzarella.
  • Spread the mixture in a baking dish. Top it with the remaining cheeses. Place into oven and cook until the cheeses have melted, about 15 minutes.
  • Garnish with cut avocado and tomato.

    • Protein: 14g
    • Calories: 312
  • I used tomato sauce in this recipe because right now I am living in France and enchilada sauce is not easy to find! 🙂
