I am back with a new recipe today! I just tried it for dinner today, it was so good I had to share 🙂
Ingredients: (For 4 servings)
- 1/2 cup of dried Italian bread crumbs
- 1/4 cup of grated parmesan
- 1/2 tsp of garlic powder
- 1/2 tsp of lemon pepper seasoning
- 1/4 tsp of pepper
- 1 egg
- 4 chicken breasts
- Marinara sauce
- Grated mozarella
Preheat your oven to 350°F. Spray a cookie sheet with avocado oil, as you will need it to cook the chicken breasts.
Mix together the bread crumbs, parmesan cheese, garlic powder, lemon pepper seasoning, pepper and salt. In a bowl, beat the egg.
Put the chicken between two layers of plastic wrap or in a ziploc bag. With a mallet, gently pound the chicken breasts until about 1/4 of an inch thick. (If you don’t have a mallet, you can use a small saucepan 🙂 )
Dip each chicken breast in the egg mixture and then in the bread crumbs until fully covered. Place on the cookie sheet and bake for about 30 minutes.
Top each chicken breast with marinara sauce and parmesan cheese. And bake again for 5-7 more minutes.
Serve the chicken parmesan with green beans, pasta or a salad!
